\u00a0These\u00a0little American\u00a0Pancakes<\/strong>\u00a0form week\u00a06 of my new year\u2019s resolution for 2013 to cook at least one new thing every week, for the year. Perfect for Pancake Day<\/strong>. Yummy!<\/p>\n

The Domestic Goddess<\/figcaption><\/figure>\n

To help me on my way with this challenge throughout the year, I shall be doing a monthly cook with Nigella Lawson from her lovely How To Be a Domestic Goddess book.<\/p>\n

I am pretending that the Goddess herself is here with me in the kitchen; guiding me, ignoring the mess I\u2019ve made and the flour I\u2019ve somehow got on the cat and laughing whole heartedly at all of my jokes.\u00a0 I shall be trying to ooze glamour and an ease and comfort within the kitchen. As the gorgeous Nigella herself says\u2026 \u201cWhat I\u2019m talking about is not being a domestic goddess exactly, but feeling like one.\u201d<\/em><\/p>\n

How To Be a Domestic Goddess February \u2013 American Pancakes\"Make<\/a><\/strong><\/span><\/h2>\n

American Pancakes Ingredients<\/span><\/h3>\n

(Makes 15)<\/p>\n

    \n
  • 225 plain flour<\/li>\n
  • 1 tablespoon baking powder<\/li>\n
  • pinch salt<\/li>\n
  • 1 teaspoon sugar<\/li>\n
  • 2 large eggs, beaten<\/li>\n
  • 30g butter, melted<\/li>\n
  • 300ml milk<\/li>\n
  • butter for frying<\/li>\n<\/ul>\n

    How To Make American Style Pancakes<\/strong><\/span><\/h2>\n
      \n
    1. Put all of the ingredients, except the butter for frying, into a blender and blitz to a smooth batter.(How easy is that!)<\/li>\n
    2. Leave the batter for 20 minutes before using it. (Time for a cup of tea and game of snap with the smalls.)<\/li>\n
    3. Heat a little of the butter for frying in a frying pan and pour in small dollops of batter.<\/li>\n
    4. When the upper side of each little pancake is blistering and bubbling it\u2019s time to flip it over and cook the second side for a minute or less.<\/li>\n<\/ol>\n

      I admit that I have attempted to make\u00a0small thick American style pancakes before, but never successfully and never by following a recipe. My pancake making method up to now has been a very simple throw some flour and an egg into a bowl and add milk until the required thickness is achieved. The results? Palatable \u2013 yeah. Leaving you yearning for more \u2013\u00a0most definitely not!<\/p>\n

      These little beauties however have changed my pancake world. I vow from now on to take the time to weigh my pancake ingredients out properly. These are so deliciously light and fluffy\u00a0that I\u00a0feel a little\u00a0bad for subjecting my family to such second rate\u00a0versions for all these years. Now Nigella does mention using a blini\u00a0pan in her recipe but I\u2019m afraid\u00a0I wouldn\u2019t recognize a blini pan if it jumped up and bit me on the nose. So I shall carry on using my trusty frying pan and believe the uneven shapes achieved offer a certain \u2018rustic kitchen\u2019 charm!<\/p>\n
