Ingredients To Make Valentine Cupcakes<\/span><\/h2>\n

(Makes 12 large Valentine Cupcakes)<\/p>\n

For The Sponge<\/strong><\/span><\/p>\n

160g butter<\/em>\u00a0
\n160g sugar<\/em>\u00a0
\n3 large eggs<\/em>
\n\u00a0160g self-raising flour<\/em>\u00a0
\n2 tablespoons coloured sprinkles tossed in a spoonful of flour.<\/em><\/p>\n

For The Butter Icing Topping<\/strong><\/span><\/p>\n

100g\u00a0softened butter<\/em>\u00a0
\n200g\u00a0icing sugar<\/em>\u00a0
\nFew drops red food colouring
\nA selection of coloured sugar pastes and heart cutters (bright sprinkles would be just as pretty)
\nGrease-proof paper<\/em><\/p>\n

How To Make Valentine\u2019s Day Cupcakes<\/span><\/h2>\n

  1. Pre-heat the oven to 180C.<\/li>\n
  2. Cream the butter and sugar together until light and fluffy.<\/li>\n
  3. Beat in each egg, one at a time, with a spoonful of the flour to prevent curdling.<\/li>\n
  4. Gently fold in the rest of the flour to make a smooth thick batter.<\/li>\n
  5. Toss your sprinkles into the spoonful of flour to lightly coat them (this helps prevent the colours bleeding away whilst cooking) and stir into the sponge mix.<\/li>\n
  6. Spoon into 12 large cupcake cases (We use muffin cases) and bake in the centre of the oven for 15-20 minutes until risen, firm to the touch and lightly golden.<\/li>\n
  7. While your cakes are cooking and cooling prepare your\u00a0topping. Roll the sugar paste thinly between 2 sheets of\u00a0 grease-proof paper and cut into your desired shapes (we used 3 different sized heart cutters), and set to one side.<\/li>\n
  8. \u00a0Beat the softened butter and icing sugar together to make a thick paste. Add your food colouring and mix in evenly. (We used just a couple of drops of red food colouring to give a pretty peachy colour when mixed with the yellow butter icing.)<\/li>\n
  9. When the cakes are cold, pipe or spread the butter icing onto the top and add your sugar paste hearts or sprinkles.<\/li>\n
  10. Now sit down with the family and share the love! Yummy!<\/li>\n<\/ol>\n
